Asazuke
For this recipe, we were inspired by the concept of joubisai, which means "always available food" in Japanese. Joubisai items are typically stored in the fridge, and you can keep these dishes on hand to quickly dress up any meal or to enjoy as a savory snack.
You can enjoy this preparation as is, or wait for the shio koji to draw more moisture out of the radish and make the mixture into a salad dressing by whisking the asazuke with olive oil and lemon juice.
Directions
Thinly slice any type of radish.
Massage the sliced radish with Yuzu Shio Koji in a small dish.
Add some microgreens or Kaiware radish sprouts.
Store in the fridge for up to several days.
