Miso mayo lettuce wraps

Ai loves the combination of chilled tomatoes with miso dip on a hot day. Last week, she picked up some beautiful red butter lettuce from Roots Organic Farm (our neighbors at the Hollywood Farmers Market) and used the leaves to wrap fresh tomatoes with miso mayo.

Ingredients

  • 1 Tbsp Omiso yellow miso paste

  • 1 Tbsp mayonnaise or vegan mayonnaise

  • mustard (optional)

  • soy sauce (optional)

  • whole leaves from any light lettuce (Ai used butter lettuce, but any crisp lettuce works)

  • tomatoes

  • tofu (optional; we highly recommend kumidashi tofu from Meiji Tofu for this recipe!)


Directions

  1. To make the miso mayo, mix mayonnaise with our artisanal miso paste. Add mustard and soy sauce to taste.

  2. Cut a tomato into 3 slices, and then halve each slice.

  3. Top tomatoes with the miso mayo dip.

  4. Wrap each dressed tomato slice with one lettuce leaf and top with tofu (and sprouts, shown here) as you like.
