Shio Koji pork ribs

The following recipe serves 2.

Ingredients

  • 1 lb pork ribs (Ai used 6pc baby back ribs)

  • 1 ½ Tbsp Yuzu Shio Koji

  • 1 Tbsp sage honey from Honey Pacifica (available at the Hollywood Farmers Market)

  • 1 clove garlic

  • ~¾" knob of ginger

Directions

  1. When you're ready to marinate the ribs, remove from fridge and set at room temperature for about 15 minutes.

  2. Grate garlic and ginger into a small bowl.

  3. Add shio koji and honey to bowl with grated garlic and ginger, and mix.

  4. Pour mixture over ribs, and massage.

  5. Cover ribs with plastic wrap or a kitchen cloth, or alternatively transfer them to a ziplock bag. Marinate in fridge for 1 day.

  6. When ready to prepare, heat oven to 350°F. Cook for about 20 minutes. The broiler also works well here. Whatever you prefer!
