Sprouted lentils with Yuzu Shio Koji
Our Yuzu Shio Koji adds brightness & contrast to one of my favorite lentil recipes — adapted from the Canal House original.
Ingredients
½ c sprouted green lentils
2 tsp olive oil
½ large leek, chopped
2 tsp tomato paste
1-2 tsp Yuzu Shio Koji, to taste
Directions
Heat olive oil in a sauce pan. Add leek and tomato paste, and cook for 3-4 minutes, until paste starts to darken.
Add lentils and water, and bring to a boil. Lower the heat, then simmer for 8-10 minutes. (This recipe works well with regular green lentils, too. You'll just have to double the cooking time.)
Allow lentils to cool before dressing with Yuzu Shio Koji.
Optionally serve on a bed of crisp lettuces and top with avocado.
