Sprouted lentils with Yuzu Shio Koji

Our Yuzu Shio Koji adds brightness & contrast to one of my favorite lentil recipes — adapted from the Canal House original.

Ingredients

  • ½ c sprouted green lentils

  • 2 tsp olive oil

  • ½ large leek, chopped

  • 2 tsp tomato paste

  • 1-2 tsp Yuzu Shio Koji, to taste

Directions

  1. Heat olive oil in a sauce pan. Add leek and tomato paste, and cook for 3-4 minutes, until paste starts to darken.

  2. Add lentils and water, and bring to a boil. Lower the heat, then simmer for 8-10 minutes. (This recipe works well with regular green lentils, too. You'll just have to double the cooking time.)

  3. Allow lentils to cool before dressing with Yuzu Shio Koji.

  4. Optionally serve on a bed of crisp lettuces and top with avocado.
