Miso ramen

So many of our customers ask if they can use our miso to make ramen. And the answer is yes, you absolutely can! Below is our recipe, which is good for 2 servings.

Ingredients

  • 3.5 oz ground pork (or replace with vegan ground meat)

  • 2 eggs (optional)

  • 3 bunches of nira aka garlic chives (often available from Yasutomi Farm)

  • 3.5 oz moyashi aka mung bean sprouts

  • 2 Tbsp sesame oil

  • 2 Tbsp miso paste

  • 1 Tbsp gochuhang or hoisin sauce

  • 12 oz dashi (your choice of vegetable, chicken, or bonito stock)

  • 2 servings of any instant ramen noodles (dry or fresh)

  • For garnish: watercress, scallions


Directions

  1. Cut nira into 1" pieces.

  2. Heat sesame oil in a saucepan, and sauté ground pork until brown.

  3. Add moyashi and nira to the pot, and saute everything together briefly.

  4. Add dashi. Once the dashi comes to a boil, add the miso and gochujang or hoisin sauce. Adjust spice to taste.

  5. Add eggs if you like, and leave to simmer for a few minutes.

  6. Separately, cook the ramen noodles in hot water for slightly shorter time than the package recommends. Do not use whatever soup contents come with the ramen.

  7. Drain the water.

  8. Reheat the brothy soup above, and add noodles to the soup.

  9. Before serving, dress with watercress and scallions as you like.
