Tomatoes with shio koji
Here’s a super-easy appetizer you can prepare with Yuzu Shio Koji — a citrusy, salty condiment that’s rich in enzymes and perfect for tenderizing meat or veggies, making quick pickles, or adding anywhere else you might use salt.
Ingredients
1 tomato
1 Tbsp Yuzu Shio Koji
1 tsp sugar (or your preferred sweetener)
1 tsp vinegar
2 tsp extra virgin olive oil
Directions
Dice tomato.
Whisk together the shio koji, sugar, vinegar, and olive oil in a small dish.
Dress the tomato with the shio koji mixture.
Enjoy just like that or served on top of a salad.
