Miso Vegetable Delight
We would like to share a delightful recipe featuring fresh summer vegetables and our beloved miso. It's quick, easy, and perfect for a light summer meal.
Ingredients:
1/2 Medium Onion, diced
1 Medium Tomato, diced
1 Medium Nasu Eggplant, diced
2 Okra, diced (as you like)
2 Garlic cloves, crushed
2 tbsp Shredded Cheese (Italian style used this time)
2 tbsp Ichinen Red Miso
2 tbsp Olive oil
Instructions:
Prepare the vegetables: Cut the tomatoes, eggplants, and onions. Crush the garlic cloves with the flat side of a knife.
Heat olive oil in a pan over medium heat and add the crushed garlic.
Once the garlic becomes fragrant, add the diced eggplant and onion. Sauté for 2-3 minutes.
Add the diced tomato and sauté for an additional minute.
Stir in the miso and cover the pan with a lid. Let it cook for 1 minute.
Transfer the sautéed vegetables to a small oven-safe dish and top with shredded cheese.
Microwave the dish for 20 seconds until the cheese is melted. Alternatively, you can heat it in the oven at 450°F until the cheese is melted and golden brown. Serve hot and enjoy!
