Miso Vegetable Delight

We would like to share a delightful recipe featuring fresh summer vegetables and our beloved miso. It's quick, easy, and perfect for a light summer meal.

Ingredients:

  • 1/2 Medium Onion, diced

  • 1 Medium Tomato, diced

  • 1 Medium Nasu Eggplant, diced

  • 2 Okra, diced (as you like)

  • 2 Garlic cloves, crushed

  • 2 tbsp Shredded Cheese (Italian style used this time)

  • 2 tbsp Ichinen Red Miso

  • 2 tbsp Olive oil

Instructions:

  1. Prepare the vegetables: Cut the tomatoes, eggplants, and onions. Crush the garlic cloves with the flat side of a knife.

  2. Heat olive oil in a pan over medium heat and add the crushed garlic.

  3. Once the garlic becomes fragrant, add the diced eggplant and onion. Sauté for 2-3 minutes.

  4. Add the diced tomato and sauté for an additional minute.

  5. Stir in the miso and cover the pan with a lid. Let it cook for 1 minute.

  6. Transfer the sautéed vegetables to a small oven-safe dish and top with shredded cheese.

  7. Microwave the dish for 20 seconds until the cheese is melted. Alternatively, you can heat it in the oven at 450°F until the cheese is melted and golden brown. Serve hot and enjoy!
