Golden Miso Chicken & Eggplant Delight
Ingredients
Chicken thighs (or breast) … 10oz (Bite sized, coated with Katakuriko Potato Starch)
Eggplant … 3 medium
Salt, pepper, and potato starch … as needed
Miso Sauce
Omiso's Amakuchi Yellow Artisanal Miso … 2 tbsp
Sake … 2 tbsp
Mirin … 2 tbsp
Sugar … 1 tbsp
Soy sauce … 1 tsp
Garlic paste … 1 tsp
Finishing Touch
Toasted sesame seeds … 1 tbsp
Chopped green onion (optional)
Instructions
Mix Sauce: Combine all sauce ingredients and set aside.
Prep Chicken & Eggplant: Cut chicken and eggplant into bite-sized pieces. Soak eggplant in water for 5 min, then pat dry.
Cook: Sauté eggplant in a pan until browned, then set aside. Coat chicken with “Katakuriko” starch and cook in the same pan until golden on both sides.
Combine: Add eggplant and sauce to the pan. Simmer until sauce thickens.
Finish: Stir in sesame seeds. Garnish with green onion and serve.
