Spicy Pork Tacos with Chickpea Red Miso
This taco recipe blends the umami of Chickpea Red Miso with a California-style freshness. A little heat and a touch of citrus make it the perfect balance of bold and refreshing flavors.
Ingredients (Serves 2)
1/2 lb ground pork
1 tbsp Chickpea Red Miso
1 tbsp Sake
1 tbsp Mirin
1 tsp smoked paprika
1/2 tsp chili flakes (or to taste)
1 clove garlic, minced
1/2 tbsp avocado / olive oil
1/2 lime, juiced
1/2 cup cherry tomatoes, diced
1/4 cup onion, finely chopped
1/2 avocado, sliced
1/4 cup fresh cilantro, chopped
4 small corn tortillas
Hot sauce (optional)
Instructions
Cook the pork: Heat oil in a pan over medium heat. Add garlic and cook until fragrant. Add ground pork and cook until browned.
Season: Mix Chickpea Red Miso, Sake, Mirin and stir it in as well as smoked paprika, and chili flakes. Cook for another 2-3 minutes, letting the miso caramelize slightly. Turn off heat and squeeze in lime juice.
Warm tortillas: Heat corn tortillas in a dry pan or directly over an open flame for a slight char.
Assemble: Place followed by the spicy miso pork on each tortilla. Top with onion and cilantro. You can add sliced avocado and cherry tomatoes if you like, or serve them on the side.
Serve: Drizzle with hot sauce if you like extra heat. Enjoy the taco packed with umami & spice!
