Koji-ya is a long-established koji shop dating back to the Muromachi period in 1566. The current head is the 22nd-generation successor in this historic line. While upholding traditional methods, they craft miso and amazake that reflect the unique climate and soil of the region.
Although dried koji offers excellent storage stability, it cannot fully match the fermentation quality and depth of flavor found in fresh koji.
